Potato Salad or ensalada de papas

Potato salad with egg and pie morrón

Puerto Rican Potato Salad, known as "Ensalada de Papa," is a delicious and creamy side dish that's perfect for gatherings and meals.


  • 4 large potatoes, boiled, peeled, and diced

  • 3 hard-boiled eggs, chopped

  • 1/2 cup sliced and diced red pepper or Pimiento Morrón

  • 1/2 cup mayonnaise

  • 1/4 cup diced white onion

  • 1/2 cup sliced green olives

  • 1/4 cup chopped fresh cilantro (optional)

  • 1 medium apple, peeled, cored, and diced

  • Salt and pepper, to taste


  1. In a large mixing bowl, combine the diced potatoes, chopped hard-boiled eggs, diced white onion, green olives, the "pimiento morrón" and chopped cilantro.

  2. In a separate bowl, whisk together the mayonnaise.

  3. Add the diced apple to the potato mixture.

  4. Gently fold the mayonnaise into the potato mixture until everything is evenly coated. Be careful not to mash the potatoes.

  5. Season the potato salad with salt and pepper to taste. Adjust the seasoning as needed.

  6. Transfer the potato salad to a serving dish.

  7. Cover the potato salad and refrigerate for at least an hour before serving. Chilling allows the flavors to meld together.

  8. Serve chilled and enjoy as a refreshing and flavorful side dish.

Adding apple brings a hint of sweetness and crunch to the traditional Puerto Rican Potato Salad, making it a unique and delicious variation. Enjoy!
