Limber coco

Limber recipe are a delightful frozen treat enjoyed in Puerto Rico and other Caribbean regions. They are similar to popsicles or ice pops, often made with fruit juices, coconut milk, and other flavorings. Here's a basic Limber or Bolis recipe for making fruit-flavored limbers:

  • 2 cups of fresh fruit juice (such as orange, pineapple, passion fruit, 1 cup of coconut milk or any fruit juice of your choice)

  • 1/4 cup of sugar (adjust to taste)

  • 1 teaspoon of vanilla extract (optional)

  • Pinch of salt

  1. Start by preparing your desired fruit juice. You can use freshly squeezed juice or store-bought pure fruit juice.

  2. In a mixing bowl, combine the fruit juice of choice, sugar, vanilla extract (if using), and a pinch of salt. Mix well until the sugar is dissolved and the ingredients are thoroughly combined.

  3. Taste the mixture and adjust the sweetness if needed by adding more sugar.

  4. Pour the mixture into small plastic cups or popsicle molds, leaving a little space at the top for expansion.

  5. Place the cups or molds in the freezer and let them freeze for about 3-4 hours, or until they are completely frozen.

  6. To serve, briefly run the cups or molds under warm water to loosen the limbers. Gently pull them out and enjoy!

  7. Limbers can be stored in the freezer for several weeks. If you have any leftovers, keep them covered to prevent freezer burn.

Feel free to get creative with your limbers by using different fruit juices, adding chunks of fruit, or experimenting with various flavorings. Limbers are a versatile and refreshing treat perfect for cooling down on a hot day!
